Country cake from southwest Hungary

Ingredients for 1 servings:

  • 2 cups corn flour
  • 1 cup flour (wheat flour)
  • 1 cup ground walnuts
  • 8 tbsp sugar
  • 3 tbsp oil (sunflower oil)
  • ½ liter kefir
  • 2 apples, not too small, grated with peel
  • 1 tsp baking soda
  • 2 pinches of salt
  • 2 eggs
  • 24 tsp plum jam or 24 prunes
  • some oil for the tray

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Kukoricaprosza

One cup equals 2 dl (0.2 liters). Stir together all ingredients except the prunes. Pour the batter into an oiled, rimmed baking sheet. The batter will be about 2 cm thick (3 cm after baking). Spread the plums or jam evenly on top (in 6 x 4 rows). Bake in an oven preheated to 180 degrees Celsius (350 degrees Fahrenheit) for 45 minutes. Cut into 6 x 4 pieces, so that each piece has a portion of jam or plum jam. Baking powder cannot be used instead of baking soda; I tried it, but it didn’t work. The recipe comes from southwest Hungary (Zala), from my daughter-in-law’s mother. Back then, the cake was a standard Sunday treat, but it wasn’t particularly suitable for special occasions (it’s too simple for that).
