Ingredients for 4 servings:

  • 8 eggs
  • 9 tbsp flour
  • 5 packs of vanilla sugar
  • 150 g butter or margarine
  • 9 tbsp powdered sugar
  • 1 liter of milk
  • Butter and breadcrumbs for the baking tray
  • Powdered sugar, for dusting

Working time approx. 20 minutes; Total time approx. 20 minutes

Intelligentsia Kremes (Hungary)

Beat the egg yolks, butter, and powdered sugar until fluffy. Gradually mix in the vanilla sugar, flour, and milk, then beat the egg whites until stiff and fold in. Grease a deep baking sheet with butter and sprinkle generously with breadcrumbs. Pour in the batter and bake for 25 minutes at 180°C, then 30 minutes at 90°C. Before baking, the batter will be very runny due to the large amount of milk, but that’s okay! During baking, the batter will separate into two layers: a pudding-like bottom layer and a pancake-like top layer. Smart, in fact. After baking, let cool, then refrigerate for about 30 minutes. Sprinkle with powdered sugar and cut into 5 x 5 cm pieces.
