Country cucumbers with gyros and feta cheese filling

Ingredients for 4 servings:

  • 4 cucumbers (country cucumbers), approx. 350 g each
  • 400 g turkey breast
  • 200 g sheep’s cheese
  • 1 red bell pepper(s)
  • 2 garlic cloves
  • 1 tsp chili flakes
  • 4 tbsp spice mix (gyro spice)
  • 6 tbsp germ oil
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Cut the meat into strips. Mix with the gyro seasoning, chili flakes, and oil. Refrigerate in a covered container and let it sit overnight. Preheat the oven to 200 degrees Celsius. Halve the cucumbers lengthwise, hollow them out, and lightly cut the bottom (so the cucumber halves stay upright). Place on a baking sheet and sprinkle with salt and pepper. Clean and dice the bell peppers. Dice the feta cheese. Peel and finely dice the garlic. Brown the meat strips without any additional oil, then remove and let cool slightly. Add the diced bell peppers to the pan and fry briefly in the remaining fat. Fry the garlic briefly, but do not let it brown. Add the bell peppers and feta cheese to the meat and mix. Fill the hollowed-out cucumber halves with the mixture and bake for about 20-30 minutes. Serve with rice and tzatziki.
