Couscous and carrot patties

Ingredients for 3 servings:

  • 200 g couscous
  • 150 ml water
  • 1 carrot(s)
  • 250 g quark
  • 1 egg(s)
  • 1 garlic clove(s), chopped, optional
  • salt and pepper
  • chili powder
  • curry powder
  • oil

Instructions

Working time approx. 20 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Bring the water to a boil with 0.5 teaspoon of salt. Stir in the couscous, then remove from the heat and let it stand for about 5 minutes. Fluff the couscous with a fork. Peel, wash, and grate the carrot. Knead it with the couscous, quark, and egg, and season with salt, pepper, curry, and chili. Shape the mixture into 11-12 meatballs, depending on their size, and fry them in hot oil. If you like, you can also add a clove of garlic to the mixture, but that’s a matter of taste. We served it with a cucumber salad. I can also imagine these patties being very good with potatoes, pasta, rice, or as a side dish to meat dishes.
