Couscous and vegetable pan with feta cheese

Ingredients for 3 servings:

  • 1 onion(s)
  • 1 zucchini
  • 2 peppers
  • 15 cocktail tomatoes
  • 400 g feta cheese
  • some olive oil
  • 150 g couscous

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegetarian

Dice the vegetables. Halve the cherry tomatoes. Dice the feta cheese. Prepare the couscous according to the package instructions. For 150g, I use about 300ml of boiling water with broth, and let it simmer for 10 minutes. Sauté the onion in the oil until translucent. Add the zucchini and bell pepper and fry. (In the meantime, I always chop the tomatoes and feta cheese.) Add the tomatoes and cheese and heat everything over low heat until the cheese melts. Once melted, it will form a nice, creamy sauce. Add the couscous, mix everything together, and enjoy!
