simple, vegetarian lunch for mom (or dad) and a toddler

Thaw the frozen peas in a frying pan with a splash of water. Pour the boiling water over the couscous, stir in the rapeseed oil, and let it swell for a few minutes. Mix in the eggs, cheese, and, depending on the child’s age, the seasonings. Fry the finished mixture in the frying pan over medium heat on both sides. We like to serve it with half cucumber slices with quark sauce or cooked carrot slices. It’s super quick, and our little one loves this wholesome and healthy meal.
