Ingredients for 1 servings:
- 250 g couscous
- 4 spring onions
- 3 bell pepper(s), red
- 2 tomatoes
- 1 tube(s) Tomato paste
- 25 ml sunflower oil
- n. B. Salt
- 1 bunch parsley, flat

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes
quick and super tasty
Pour boiling water over the couscous according to the package instructions (usually 1 part couscous to 2 parts water). Add salt to taste and let it stand. Wash the vegetables and cut into small pieces. Slice the spring onions into thin rings. Once the couscous has absorbed the water, stir thoroughly and check that all the water is gone. Drain in a sieve if necessary. Then return the couscous to the bowl and stir in the oil. Once the oil is evenly distributed, add the tomato paste and stir until it is distributed and the couscous has taken on an even reddish color. Let the couscous mixture cool and then fold in the vegetable pieces. Now wash and finely chop the parsley. Fold this in thoroughly and let the salad stand for another 30 minutes if possible (but this is not necessary; you can eat it straight away!). Season again to taste.
