Ingredients for 6 servings:

  • 250 g couscous
  • 1 can of corn
  • 1 cucumber(s)
  • 1 bell pepper(s), red
  • 2 garlic cloves
  • e.g. parsley
  • e.g. chives
  • 1 tbsp herbs de Provence
  • mayonnaise
  • Salt
  • pepper
  • 250 ml water
  • 2 tsp butter

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Prepare the couscous according to the package instructions. Bring 250 ml of water, 1 tablespoon of oil, and 1 teaspoon of salt to a boil. Remove from the heat, stir in the couscous, and let it swell for 2 minutes. Then stir in 2 teaspoons of butter and cook over low heat for 3 minutes until done. Peel or trim the cucumber and bell pepper and cut into small cubes. Drain the corn in a sieve. Peel the garlic cloves and finely dice or press them. Finely chop the chives and parsley. Stir everything into the couscous. Finally, mix in the mayonnaise, salt, pepper, and Provençal herbs. Let it stand for at least 3 hours before serving. This is ideal if prepared the day before.
