Ingredients for 1 servings:
- ¼ pineapple, fresh, peeled
- ½ stalk(s) rhubarb
- 2 marshmallows
- 1 sugar cube
- some water
- 2 tbsp quark (low-fat quark)
- 1 tbsp lemon juice
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
American style with marshmallows
Put the peeled pineapple into a small bowl and cut the flesh into pieces (to retain the juice). Use scissors to chop the marshmallows into small pieces and add them to the pineapple, covering them with pineapple juice. Place in the refrigerator for a while. Then boil some water with the sugar cube. Trim the rhubarb and cut it into 1.5-2 cm pieces. Add it to the sugar water and simmer for about 5 minutes. Add it to the pineapple along with the cooking water – the marshmallows will now rise nicely. Drizzle with the quark and lemon juice. Tip: If needed, stir in more sugar to the quark – I personally prefer it without.
