Ingredients for 3 servings:

  • 2 jars of couscous
  • 2 tbsp oil
  • 2 glasses of boiling water
  • 1 spring onion(s)
  • 2 large carrots
  • ¼ bell pepper(s), red or yellow
  • 3 tbsp parsley, chopped
  • ½ small garlic clove(s), squeezed
  • 1 tbsp balsamic vinegar
  • 3 tbsp oil
  • e.g. chili flakes
  • 2 tbsp chili sauce, hot and sweet
  • e.g. iceberg lettuce, fine strips
  • e.g. natural yogurt or sour cream

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Brown the couscous in oil, add boiling water, and let it swell. Cut the vegetables into small cubes, toss briefly in oil, and sauté briefly with a little water. It should remain crunchy. Combine the vegetables, couscous, and all other ingredients and let cool. Serve with iceberg lettuce strips and natural yogurt. This recipe can be easily adapted to your taste.
