Ingredients for 6 servings:

  • 250 g couscous
  • n. B. water
  • 2 bell peppers
  • 1 cucumber(s)
  • 1 bunch of parsley
  • Salt and pepper, black
  • 1 tbsp sugar
  • 30 ml olive oil
  • 2 limes, the juice
  • some tomato paste, if desired

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare the couscous according to the package instructions. I used instant couscous, but any other couscous is finely diced. Finely dice the bell peppers and cucumber and chop the parsley. Mix these with the cooled and soaked couscous. Mix the dressing with the lime juice (you can also add the lime flesh if you like), 1 tablespoon of sugar, pepper, salt, and about 30 ml of olive oil and add it to the couscous salad. Add more salt, pepper, or oil as needed. If you like, you can also add a little tomato paste to the dressing; it will give it a beautiful red color and a Mediterranean flavor.
