Ingredients for 4 servings:

  • 250 g couscous, dry
  • 250 ml vegetable stock
  • 2 tbsp olive oil
  • 1 small onion(s), red
  • 1 jar Miracel Whip, (so light) 250g
  • 1 medium-sized red bell pepper(s)
  • 3 small gherkins
  • 3 eggs, hard-boiled
  • 2 large tomatoes
  • 2 tsp dill tips (fresh, frozen or dried)
  • n. B. Pfeffer

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cook couscous in vegetable broth according to package instructions and set aside. Sauté onion in olive oil until translucent. Chop bell peppers, gherkins, eggs, and tomatoes. Mix with Miracle Whip and dill. Season with pepper. Add onion and couscous. Let stand for at least 1 hour. Enjoy!
