Ingredients for 8 servings:

  • 300 g couscous
  • 5 tomatoes
  • 1 cucumber(s)
  • 1 large onion(s)
  • 100 g green pitted olives
  • 3 lemon(s), the juice
  • 150 ml olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

the typical picnic salad in South-West France

Mix the couscous with the olive oil and lemon juice. Wash the tomatoes and cut them into eighths. Peel and slice the cucumber. Slice the onion into rings, mix well with the couscous, and add the olives. Season well with salt and pepper and let it sit in the refrigerator for at least 6 hours. We discovered this couscous salad at a friend’s house in southwest France. Our host/friend told us it’s a must-try at any picnic. This salad is also always welcome at barbecues and parties.
