Ingredients for 8 servings:
- 1 gr. can/n beans, white, approx. 850 ml
- 3 onions, red
- 2 bell peppers
- 2 carrots
- 1 cucumber(s)
- 5 tomatoes
- 1 small head of iceberg lettuce
- some parsley
- some chives
- salt and pepper
- 150 ml balsamic vinegar, lighter
- 5 tbsp maple syrup
- 8 tbsp olive oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Drain the beans. Peel the onion and slice into strips. Finely dice the bell pepper. Peel the carrots and coarsely grate them. Peel the cucumber, remove the core, and finely dice. Finely dice the tomatoes. Wash the lettuce, spin dry, and finely chop. Chop the parsley and chives. Combine the prepared salad ingredients and herbs in a large bowl. For the vinaigrette, combine the vinegar, maple syrup, salt, and pepper, then whisk in the oil. Pour the vinaigrette over the salad and mix everything well. Approx. 160 kcal per serving.
