Ingredients
 

  • 100 g Couscous
  • 1 tbsp Butter
  • 1 Avocado
  • 1 Lemon, the juice
  • 3 tbsp Olive oil
  • 1 Red Onion
  • 150 g Colorful, small tomatoes
  • 150 g Feta
  • 2 Garlic cloves
  • 2 tbsp Chopped leaf parsley
  • Espelette pepper
  • Black pepper from the mill
  • Salt

Instructions
 

  • Put the couscous in a bowl and pour 300 ml of boiling water over it, let it soak for about 15 minutes and then pour the butter on the still warm couscous, let it melt, stir well and add salt, pepper and allspice d ' Season the Espelette. Grate the garlic cloves.
  • Cut the avocado in half, take the meat out of the shell and dice it, put it in an extra bowl and pour the lemon juice over it. Now add the olive oil, stir once and let stand for now.
  • Finely dice the red onion and add to the couscous. Cut the tomatoes into slices and add them as well. Now crumble and add the feta and then add the chopped parsley. Now add the avocado with the lemon juice and the olive oil and mix everything well and season to taste if necessary.
