Ingredients
- 1 Cup Couscous fine
- 2 Cup Vegetable broth hot
- 3 tbsp Tomato paste
- 2 tsp Harissa paste
- 3 tsp Ras el Hanout spice
- 1 Avocado
- 6 Tomatoes
- 1 bunch Arugula
- 0,5 Philosopher Tofu from Lord of Tofu
- 3 tbsp Olive oil
Instructions
- Mix the Ras el Hanout with the couscous in a bowl. Stir tomato paste and harissa into the broth and pour over the couscous. Let it swell, stirring occasionally
- Dice tomatoes, avocado and tofu. Roughly chop the rocket.
- Stir the olive oil into the couscous. Carefully mix in the tomatoes, avocado, tofu and rocket. Min. Let it steep for 1 hour.
