Couscous Salad with Avocado and Tomato

Ingredients
 

  • 1 Cup Couscous fine
  • 2 Cup Vegetable broth hot
  • 3 tbsp Tomato paste
  • 2 tsp Harissa paste
  • 3 tsp Ras el Hanout spice
  • 1 Avocado
  • 6 Tomatoes
  • 1 bunch Arugula
  • 0,5 Philosopher Tofu from Lord of Tofu
  • 3 tbsp Olive oil

Instructions
 

  • Mix the Ras el Hanout with the couscous in a bowl. Stir tomato paste and harissa into the broth and pour over the couscous. Let it swell, stirring occasionally
  • Dice tomatoes, avocado and tofu. Roughly chop the rocket.
  • Stir the olive oil into the couscous. Carefully mix in the tomatoes, avocado, tofu and rocket. Min. Let it steep for 1 hour.
