Couscous Salad with Avocado and Tomato

The perfect couscous salad with avocado and tomato recipe with a picture and simple step-by-step instructions.

  • 1 Cup Couscous fine
  • 2 Cup Vegetable broth hot
  • 3 tbsp Tomato paste
  • 2 tsp Harissa paste
  • 3 tsp Ras el Hanout spice
  • 1 Avocado
  • 6 Tomatoes
  • 1 bunch Arugula
  • 0,5 Philosopher Tofu from Lord of Tofu
  • 3 tbsp Olive oil
  1. Mix the Ras el Hanout with the couscous in a bowl. Stir tomato paste and harissa into the broth and pour over the couscous. Let it swell, stirring occasionally
  1. Dice tomatoes, avocado and tofu. Roughly chop the rocket.
  1. Stir the olive oil into the couscous. Carefully mix in the tomatoes, avocado, tofu and rocket. Min. Let it steep for 1 hour.
