Ingredients

  • 200 g Couscous fine
  • 200 ml Brewing water
  • 2 Tomatoes
  • 1 Yellow peppers
  • 0,5 Cucumber
  • 2 Spring onion
  • 1 bunch Chopped parsley
  • 3 tbsp Oil
  • 0,5 tsp Lemon juice
  • 1 tsp Soy sauce
  • Salt and pepper

Instructions

  • Halve and core the tomatoes, then cut into large cubes. Peel and core the cucumber into fine strips. Core and dice the peppers, cut the spring onions into small rings, and place the vegetables in a large bowl. Bring the scalded water to a boil, remove from the stove and stir in the couscous, let it swell briefly, let it cool down a little and mix with the vegetables. Add the finely chopped parsley. Mix together the oil, lemon juice, soy sauce, salt and pepper, add the vegetables to the couscous. Stir everything well and let it steep in the refrigerator. Tastes good in summer with all grilled dishes and in winter with baked potatoes with sour cream. Good Appetite
