Covered cherry cake

Ingredients for 1 servings:

  • 100 g quark
  • 50 g margarine or butter
  • 3 eggs
  • 150 g sugar
  • 300 g flour
  • 1 packet of vanilla sugar
  • 6 tbsp milk
  • 1 bar of dark chocolate, grated
  • 1 tsp cinnamon (heaped tsp)
  • 1 tsp nutmeg
  • 1 tbsp rum, alternatively cherry juice
  • 1 tbsp cocoa powder (heaped tbsp)
  • 500 g cherry(s), drained
  • Powdered sugar for sprinkling
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 200°C. Beat the margarine and quark until fluffy. Add the eggs, sugar, and vanilla sugar. Gradually fold in the sifted flour mixed with the baking powder. Then add the milk, cocoa powder, nutmeg, cinnamon, and rum. If the batter is very thick, add a little more milk. Now fold in the grated chocolate. Pour 1/3 of the batter into a greased springform pan and top with the cherries. Spread the remaining batter over the cherries. Place the cake in the oven and bake for 60 minutes. Once it has cooled, sprinkle it with powdered sugar.
