Cowboy Spare Ribs

Ingredients for 3 servings:

  • 2 portions of spare ribs (baby back ribs)
  • 3 tsp mustard, hot
  • 15 slices of bacon
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 2 tsp cane sugar
  • 1 tsp salt
  • 3 tsp BBQ sauce, homemade

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes

A little more work, but the taste will thank you

Preheat the smoker to 130°C. As always, remove the silver skin from the spare ribs. Always cut the ribs in half between the bones, ensuring there is enough meat on both sides of the bone. Place all the pieces in a bowl, mix with the spices and mustard, and knead well. Place all the ribs on the grill in the smoker and smoke for one hour at 130°C. Now remove all the ribs, brush them with a little BBQ sauce, and wrap each one in a slice of bacon. Return all the ribs to the smoker for one hour. When the bacon is golden brown, they are done. As always, the ribs can also be cooked in the oven.
