Ingredients for 1 servings:
- 200 g cranberries
- 300 ml juice (blood orange juice)
- 500 g brown gelling sugar
- 1 tbsp lemon juice
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes
goes well with pancakes, rice pudding etc., but also with game
Pour the gelling sugar into a tall saucepan. Sort and wash the cranberries, then add them to the sugar along with the blood orange juice and lemon juice. Mix everything well and bring to a boil while stirring. Let the fruit mixture boil gently for about 3 minutes. You’ll hear a gentle popping sound as the cranberries burst during heating. Then skim off any foam that forms and immediately pour the hot fruit sauce into sterilized twist-off jars and seal them tightly. I like to serve the fruit sauce in peach or pear halves, or with a game stew. It’s also great for flavoring gravies (instead of cranberry or blackcurrant jelly). Using a little less juice during preparation will produce a thicker result, which is also ideal as a spread.
