Cranberry chocolate cookies

Ingredients for 1 servings:

  • 250 g butter
  • 150 g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 250 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 tbsp sunflower oil
  • 100 g almonds, chopped
  • 50 g oat flakes
  • 150 g cranberries, dried
  • 150 g chocolate chips or chocolate shavings, white or dark

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes

for approx. 25 pieces

Cream the butter with the sugar, add the eggs and vanilla extract, and mix in. Combine the flour with the baking powder and salt and add to the mixture. Mix everything together. Heat the oil and lightly toast the almonds and oats. Add these to the mixture along with the cranberries and chocolate chips and mix. Use an ice cream scoop to place mounds of dough onto a baking sheet lined with baking paper. Leave enough space between each cookie, as they will spread. Bake in a preheated oven at 160 degrees Celsius (convection oven) for about 10-12 minutes. Let cool and enjoy. Makes about 25 cookies.
