Cranberry-White Chocolate Cookies

Ingredients for 1 servings:

  • 200 g butter
  • 300 g sugar
  • 2 eggs
  • 300 g flour
  • 1 tsp, heaped baking powder
  • 2 tsp, heaped vanilla sugar
  • 200 g chocolate, white, chopped
  • 200 g cranberries

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

Knead the butter, sugar, and eggs by hand into a dough. Then add the baking powder mixed with the flour and the vanilla sugar. Then add the white chocolate and cranberries to the dough and knead everything thoroughly again. This amount of dough is enough for about 9 large or 18 small cookies. For large cookies, use a tablespoon to place small heaps on the baking sheet; for small cookies, use a teaspoon to place small heaps. Bake the cookies at 170°C for about 10-15 minutes, until they are very light golden brown. Important: The cookies must be soft when they come out of the oven, as they will harden as they cool. They should rest for about 1 hour. This recipe can be wonderfully varied, e.g., with nuts, etc.
