Ingredients for 2 servings:
- 100 g crayfish meat, cooked
- 1 cup sour cream or crème fraîche
- 1 apple, sweet, red-skinned
- 1 spring onion(s), only the green part
- 1 tbsp honey mustard
- 1 tsp liquid honey
- salt and pepper
- dill
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
First, combine the sour cream or crème fraîche with the mustard and honey. Rinse the apple thoroughly and cut it into small cubes, peeling it, then stir it into the cream. Finely slice the onion, pat the crayfish meat dry, and fold both into the cream. Season with dill, salt, and pepper. Let it sit in the refrigerator for about 2 hours. I usually garnish it with some leek and serve it with dark bread as a base. It also works well with gravlax.
