Ingredients for 4 servings:
- 1 mango(s) (air-dried mango)
- 125 g crayfish meat
- ½ apple
- ½ bunch spring onion(s), sliced into rings
- 150 g tomatoes, deseeded
- 1 onion(s)
- 2 tbsp tomato paste
- 2 tbsp wine vinegar
- 6 tbsp oil
- Salt and pepper from the mill
- Sugar
- Cayenne pepper

Peel the mango and apple. Wash the tomatoes and remove the cores. Finely dice all three ingredients. Peel and finely dice the onion. Trim the spring onions and slice them into thin rings. Mix the tomato paste, vinegar, oil, and spices into a fine marinade and combine everything. Season to taste and stir in the fruit and tomato mixture. Season again to taste. Finally, add the crayfish meat and gently fold in. Sounds simple – but the result is fantastic.
