Ingredients for 1 servings:

  • 1 liter of milk (whole milk)
  • 30 cl vinegar, white or lemon juice
  • ½ tsp salt
  • e.g. freshly ground pepper (alternatively herbs of your choice)
  • e.g. olive oil

Heat the milk while stirring constantly (no skin should form). Just before the milk boils, add the vinegar or lemon juice. Continue stirring for about 10-15 seconds, then remove from the heat. Strain the mixture through a kitchen towel (or better yet, a diaper). Drain and place in a dish with the towel. Continue draining and allow to cool. Once cooled, cut the cheese into small cubes. Place in a clean jar with freshly ground pepper or finely chopped herbs of your choice in olive oil. Variations: Marinate with a small, very finely chopped chili pepper, or add about 1/2 teaspoon of finely chopped fresh green pepper during cooking.
