Cream cheese gnocchi

Ingredients for 4 servings:

  • 1 bunch of basil
  • 240 g cream cheese, grainy
  • 2 eggs
  • 2 tsp salt
  • 300 g flour
  • Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 20 minutes

Finely slice the basil. Mix the cream cheese with the eggs, basil, and salt. Add the flour and knead everything into a smooth dough. Wrap in cling film and let it rest in the refrigerator for 30 minutes. Form the dough into logs on a floured surface. Cut the logs into small pieces and, using a fork, press a stripe pattern into each piece. Place portions in plenty of boiling salted water and let it simmer for about 5 minutes. Remove from the pan and sprinkle with Parmesan shavings to serve.
