Ingredients for 4 servings:
- 500 g spinach
- 1 onion(s)
- 100 g butter
- 150 g mascarpone
- 80 g Parmesan
- 2 eggs
- 1 egg(s), including the yolk
- 2 tsp salt
- pepper
- 200 g flour (wheat flour)
Instructions

(Gnocchi with spinach)
Sort and wash the spinach, place it in a saucepan while still dripping wet, and let it wilt over medium heat. Drain and roughly chop. Dice the onion. Heat 30g of butter in a pan. Soften the onion and stir in the spinach. Remove from the heat and let cool until lukewarm. Beat the mascarpone until smooth, then stir in half of the Parmesan, the eggs and egg yolks, salt, nutmeg, pepper, and spinach. Finally, add the flour and mix. Season the mixture generously with salt and pepper. Bring plenty of salted water to a boil. Reduce the heat, then use two wet teaspoons to cut small dumplings out of the dough and shape them into gnocchi. Add them to the boiling(!) salted water and let them stand for about 5 minutes until they rise to the surface. Remove from the heat and transfer to an ovenproof dish. Now melt the remaining butter and drizzle it over the gnocchi, sprinkle with Parmesan and bake in the oven (150°) for 5 minutes.
