Cream of mushroom soup

Ingredients for 4 servings:

  • 400 g mushrooms
  • 500 ml vegetable stock
  • 1 onion(s)
  • 50 g butter
  • 200 ml whipped cream
  • 3 tbsp flour
  • 1 bunch of chives
  • Salt
  • pepper, black

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean and slice the mushrooms. Whip the heavy cream until stiff and finely chop the chives. Melt the butter in a saucepan. Peel the onion, dice it, and brown it in the butter. Dust with flour and sauté briefly until light brown. Add the vegetable stock and mushrooms and cook for about five to ten minutes, stirring. Season with salt and black pepper. Stir in the whipped cream and chives and serve immediately.
