Mushroom soup

Ingredients for 4 servings:

  • 1 onion(s)
  • ½ tsp powdered sugar
  • 1 tsp oil
  • 2 cl Noilly Prat
  • 600 g mushrooms or wild mushrooms, cleaned and sliced
  • ½ liter vegetable broth
  • 200 g cream
  • 1 tbsp lemon juice
  • salt and pepper
  • 1 tbsp, leveled instant flour

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the onion, dice it into small pieces, and place it in a saucepan. Dust it with powdered sugar and sauté gently. Once the onion cubes are translucent, add the oil and continue sautéing. Deglaze with Noilly Prat and reduce slightly, then add the mushrooms and pour in the stock. Simmer gently for about 10 minutes, then add the cream and lemon juice and heat briefly again. If you like, you can make the soup a little thicker with the flour. Season generously with salt and pepper and sprinkle with parsley. Serve with bread dumplings or fresh rolls.
