Ingredients for 4 servings:
- 1 onion(s)
- 1 lime(s)
- ½ bunch mint
- 1 clove(s) garlic
- 2 tbsp oil
- 800 ml vegetable stock
- 600 g peas (frozen)
- 4 tbsp crème fraîche
- salt and pepper
- tarragon
- 150 g natural yogurt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Dice the onion, halve the lime, and squeeze out the juice. Finely chop the mint and garlic. Heat the oil in a saucepan and sauté the diced onion and garlic until translucent. Deglaze with the stock. Add the peas and simmer for about 10 minutes. Purée the soup, stir in the crème fraîche, and season with salt, pepper, and tarragon. Mix the yogurt with the mint and season with lime juice. Serve the soup on plates and garnish with a dollop of mint yogurt and a mint leaf.
