Creamed cucumbers with smoked salmon

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 150 g smoked salmon
  • 0.38 liters of water
  • 1 cup sour cream
  • 125 ml vegetable stock
  • 200 g processed cheese, with herbs
  • 1 tbsp dill, finely chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the cucumber, halve it, and remove the seeds. Cut the cucumber halves into pieces. Cut the smoked salmon into strips. Cook the cucumber pieces in unsalted water for about 5 minutes, pour it into a sieve, and collect the vegetable water. Pour the sour cream and 125 ml of the vegetable water into the pot. Bring to a boil and stir in the herb cream cheese. Add the cucumbers and simmer over low heat. Just before serving, add the salmon and garnish with dill. Serve with rice.
