Creamed herring on potato cakes

Ingredients for 4 servings:

  • 1 pack of herring (cream herring)
  • 3 m.-sized potatoes, mainly waxy
  • 2 m.-sized eggs
  • breadcrumbs
  • vegetable oil
  • Paprika powder
  • Flour
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes and cut into approximately 1 cm thick slices. Boil the slices in lightly salted water for 10 minutes, then drain and pat dry. While the potatoes are cooking, cut the herring into thin strips. Prepare three plates: one with flour, one with a beaten egg and seasoning, and a third with breadcrumbs. Heat a pan with a little oil on the stovetop. Coat the potato slices in flour, then in egg, and finally in breadcrumbs, then fry in the pan until golden brown. Place the fried potato slices on a kitchen towel to remove any excess oil. After 2-3 minutes, decorate each potato slice with a ring of herring strips, leaving a hole in the center, and fill this with a little cream sauce. Arrange the potato patties on a plate and serve.
