Ingredients for 6 servings:
- 4 kohlrabi, diced
- 3 spring onions, cut into small slices
- 300 ml sour cream
- 20 g butter
- 2 tsp sugar
- 2 tsp pepper, white
- 1 tbsp lemon juice
- Salt
- nutmeg
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Bring a pot of water to a boil (kohlrabi only needs to be barely covered with water; if you prefer, add a vegetable stock cube to the kohlrabi cooking water. Collect the stock after cooking and use it to cook the next batch of pasta (or rice) – it can be stored in the cool refrigerator for a few days). Cook the kohlrabi cubes in the boiling water for about 5-7 minutes, then drain and keep warm. In a second pot, heat the butter, add the spring onions, and sauté until al dente. Then add the kohlrabi cubes and mix everything well. Stir in the sour cream, lemon, pepper, and sugar. Heat for a few minutes, then season with salt and nutmeg.
