Leek vegetables – delicious with fish

Halve both leeks, wash thoroughly, and cut into rings about 0.5 cm thick. Place in a saucepan and fill with cream up to about 1/3 (the cup is about right). Simmer gently until the leeks are cooked (the leeks will shrink slightly). Stir occasionally. Season with salt and pepper, and serve. Tip: If you want to reheat the leeks the next day, we recommend blanching them briefly in boiling water before cooking so they don’t turn gray when reheated (which wouldn’t affect the flavor, by the way). This vegetable side dish is quick and easy to prepare and goes well with fish, among other dishes.
