Creamed onion soup

Ingredients for 4 servings:

  • 2 tbsp butter
  • 400 g onion(s)
  • 3 tbsp flour (wheat flour)
  • 1 jar white wine
  • ½ liter vegetable broth or meat broth
  • 1 cup of cream
  • Salt
  • Pepper from the mill
  • 1 pinch of nutmeg
  • 1 pinch(s) of caraway powder
  • 1 pinch(s) of sugar
  • 4 slices of white bread
  • 2 tbsp butter
  • 1 bunch of chives

Instructions

Heat the butter in a saucepan and sweat the peeled and sliced ​​onions until translucent. Dust the onions with wheat flour, deglaze with the white wine, and add the vegetable or meat broth. Pour in the cream, season the soup generously with salt, pepper, nutmeg, caraway seeds, and sugar, and simmer over moderate heat for 10-15 minutes. Cut the white bread into cubes, heat the butter in a pan, and toast the bread cubes until golden brown. Season the creamed onion soup again, serve, sprinkle with the white bread cubes and freshly chopped chives, garnish, and serve immediately.
