Ingredients for 4 servings:
- 4 pork schnitzels
- 2 large onions
- 2 large garlic cloves
- ¼ liter red wine
- 1 cup cream
- Tomato paste
- Mustard, hot
- Salt
- pepper
- olive oil
- possibly gravy
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
prepared in a pressure cooker
Finely chop the onions and garlic cloves and fry in olive oil. Remove and set aside. Pound the pork cutlets, season with salt and pepper, and brush with English (hot) mustard. Brown and remove. Return the onions and garlic to the pot, add the tomato paste, pour in the water and red wine, and if desired, add a cube of gravy. Purée with a hand blender; let it reduce slightly. Add the pork cutlets; the liquid should be covered. Cook on the first ring for one hour. Then add a cup of cream. I then removed the meat and puréed the sauce again. Serve with rice or hash browns.
