Ingredients for 3 servings:
- 400g pasta
- 2 avocados
- 1 handful of arugula
- 1 handful of cocktail tomatoes
- 200 ml cream
- 2 garlic cloves
- salt and pepper
- e.g. pine nuts
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Cook the pasta in boiling salted water according to the package instructions. Remove the avocados from their skins and blend them with the arugula and garlic until creamy. Heat the cream. Meanwhile, halve the tomatoes. When the cream begins to simmer, add the tomatoes and the avocado-arugula cream. Season with salt and pepper and simmer for a few minutes. If desired, toast the pine nuts in a dry pan and sprinkle over the pasta before serving.
