Ingredients for 3 servings:
- 1 zucchini
- 150 g leaf spinach
- 150 g mushrooms
- 100 g glass noodles
- 250 ml coconut milk
- pepper
- Salt
- n. B. spice(s)

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Simple, vegetarian and suitable for takeaway
Wash the zucchini and cut into small pieces. Wash the spinach. Wipe the mushrooms with a damp cloth and cut into small pieces. Sauté the vegetables in a frying pan. Add coconut milk and season with salt and pepper. Sweet paprika and curry powder also go well with the dish. If you like, you can also add fresh coriander. Bring 1 liter of water to a boil in a pan, add salt, and soak the glass noodles for 3-5 minutes until translucent. Then drain and add to the vegetables. The very long noodles can be easily shredded with a spatula. Mix everything well and serve immediately.
