With fish, white meat and eggs

Melt the butter in a pan, then add the flour and slowly brown, stirring constantly, until no lumps form. Pour in the water and spices and simmer gently. Whisk until smooth, then gradually add the milk. Bring to a boil briefly. Then carefully add the herbs. Do not let them boil any further! The daisies can be used as a nice garnish, but you can also stir them in straight away. If you don’t have one of the herbs available, substitute it with another. Variety is key. Goes well with eggs, fish, and white meat.
