Ingredients for 4 servings:

  • 400 g pasta (e.g. penne), cooked
  • 200 g leaf spinach
  • 350 g mushrooms, fresh
  • 100 g butter, salted
  • 100 g Gorgonzola, crumbled
  • 100 g cheese, spicy, grated
  • 100 g Camembert(s), crumbled
  • 50 g Parmesan, grated
  • salt and pepper
  • 50 g flour
  • 500 g milk
  • 300 ml crème fraîche
  • Fat for the mold
  • possibly onion(s)
  • possibly garlic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with a delicious four-cheese sauce

Heat 25g of butter in a pan and sauté the spinach. Then squeeze the spinach dry. Sauté the mushrooms vigorously in 25g of butter. Heat 40g of butter in a saucepan, but do not let it brown. Briefly sauté the flour. Add the milk, stirring. Simmer gently for 10 minutes. Stir in the crème fraîche and 2/3 of each cheese, and season. Mix the pasta with the vegetables and sauce. Season. Transfer to a greased baking dish and sprinkle with the remaining cheese. Bake at 180°C for 15-20 minutes. You can also add onion and garlic.
