Chinese fried rice

Ingredients for 4 servings:

  • 200 g rice (long grain rice)
  • 6 eggs
  • ½ tsp salt
  • 3 tbsp vegetable oil
  • 125 g cooked ham, diced
  • 75 g peas (frozen), thawed
  • 1 tbsp spring onion(s), finely chopped
  • Water (salt water)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the rice in salted water according to the package instructions. Lightly beat the eggs in a bowl with the salt. Heat 2 tablespoons of oil in a 30 cm non-stick frying pan. Add the drained rice and toss in the oil until fully coated. Push the rice to one side of the pan. Add the remaining oil to the open surface of the pan and heat until very hot. Pour in the beaten egg mixture. Stir constantly until the egg mixture sets. Stir the rice, ham, and peas into the egg. Serve sprinkled with spring onions.
