Ingredients for 4 servings:

  • 150 ml soy milk (soy drink)
  • 200 ml whipped cream
  • 3 egg yolks
  • 30 g xylitol (sugar substitute)
  • n. E. vanilla aroma or vanilla drops
  • sugar, brown

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 20 minutes

Preheat the oven to 140°C (top and bottom heat). Heat the milk and cream in a saucepan and season with vanilla. Whisk the egg yolks with Xucker until creamy and add the warm cream. Pour the cream into glasses; I used four. Fill a baking dish so that the glasses are two-thirds submerged in water. Let the cream set in the oven for at least one hour. Remove the cream and let it cool. Sprinkle with brown sugar and return to the oven for about 10 minutes – without a water bath – until the sugar is caramelized. To do this, use the top heat or the grill function.
