Creme Mouseline – Lactose-free and Vegan

The perfect creme mouseline – lactose-free and vegan recipe with a picture and simple step-by-step instructions.

  • 30 g Onion
  • 0,5 tablespoon Corn oil
  • 60 ml Nolly Prat
  • 200 ml Vegetable broth
  • Salt and pepper
  • 100 ml Oat cuisine
  • 20 g Alsan margarine

Preface

Preparation of the Mouseline cream

  1. Cut the onion into small cubes and then gently sweat it in corn oil without taking any color – then deglaze with nolly prat and reduce the whole thing a little – then add the vegetable stock and reduce again vigorously
  2. Add oat cuisine (or cream) and bring everything to the boil again – if necessary, season with salt and pepper – then run the mouseline through a mesh sieve (this will make it velvety, fine and elegant) – the remaining onion could be used as a side dish Serve separately because it tastes fine

a word about the onion

  1. if you use white onion, the end result is also the cream mouseline light and cream-colored … I think that looks more elegant, but unfortunately this time I only had red onions available, the mouseline is now yellow …
