Crispy Coconut Sponge Cake

Ingredients
 

  • 3 Eggs
  • 120 gr Sugar
  • Salt
  • 100 gr Flour
  • Coconut flakes

Instructions
 

  • Separate the eggs and beat the egg whites with a pinch of salt until stiff. Then slowly add the sugar and mix with it. Now slowly stir in the egg yolks with the mixer. Finally, slide in the flour and carefully stir in everything.
  • Preheat the oven to 210 degrees. The best thing to do is to prepare baking trays and line them with baking paper. Then you fill the dough in a piping bag or spread it out on the baking sheets for a long time. Mine are about 1 cm wide and 5 cm long. In the oven they will rise a little and also get a little wider. Therefore do not squirt the dough together as the dough still runs a little. Then you sprinkle your coconut flakes on the particles and put them in the oven for about 12 minutes and let them bake golden brown. Always keep an eye on them because they could get dark quickly. With this amount I get about 35 particles. A delicious, light, sweet snack for in between!
