Crispy Fish Fillet with Herb and Bacon Sauce

- 8 tablespoon Flour
- 12 tablespoon Breadcrumbs
- 2 piece Eggs
- 8 tablespoon Oil
- For the sauce
- 100 g Bacon breakfast bacon
- 1 piece Onion
- 1 piece Clove of garlic
- 2 tablespoon Dill
- 2 tablespoon Chives
- 2 tablespoon Parsely
- 1 Coffee spoon Oil for frying
- 2 tablespoon Butter
- 2 tablespoon Flour
- 350 ml Milk
- 200 ml Vegetable broth
- Pepper, salt, paprika, nutmeg
- Wash the fish fillet and pat dry. Spread flour on one plate and breadcrumbs on another plate. Whisk the eggs in a deep plate. Season the fish with pepper, salt and paprika and roll it first in flour, then in egg and finally in breadcrumbs. Heat the oil in a pan and fry the fillets on each side until crispy.
- For the sauce: cut 100 grams of bacon very small. Dice the onion, chop the garlic and herbs.
- Heat the teaspoon of oil in a saucepan and fry the bacon with the onion and the garlic until crispy. Melt 2 tablespoons of butter in it and sprinkle in the flour – stir well! Mix the broth with the milk and use it to deglaze everything. Let simmer until the sauce thickens. Scatter herbs and season with pepper, salt and nutmeg.
