Ingredients for 10 servings:

  • 150 g oat flakes
  • 50 g sunflower seeds
  • 50 g pumpkin seeds
  • 50 g walnuts, roughly chopped
  • 50 g cashew nuts, coarsely chopped
  • 50 g coconut flakes
  • ½ tsp cinnamon powder
  • ½ tsp vanilla powder, alternatively a few drops of liquid vanilla flavor
  • 1 organic lemon(s), zest
  • 50 mg agave syrup

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Preheat the oven to 120°C (top/bottom heat). Combine the oats, seeds, nuts, and coconut flakes in a large bowl. In a separate bowl, combine the agave syrup, lemon zest, cinnamon, and vanilla powder. Add this mixture to the oat mixture and stir thoroughly until evenly blended. Line a baking sheet with parchment paper. Spread the mixture evenly and bake in the oven for about 45 minutes, until dry and golden brown. For small baking sheets, stir/turn occasionally if necessary. Allow the granola to cool completely and store in an airtight container. Makes approximately 10 servings of 40 grams each. One serving has 210 kcal.
