Ingredients for 2 servings:

  • 1 Hokkaido pumpkin(s)
  • 2 egg whites
  • Paprika powder, sweet
  • Thyme, dried
  • salt and pepper
  • ½ tsp guar gum

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Low-carb

Cut the pumpkin into thin sticks and soak in water for half an hour. Beat the egg whites until stiff. Prepare a bag with the spices except salt and half a teaspoon of guar gum. It’s important not to use any salt! After half an hour, dry the fries, place them in the bag, and shake vigorously to distribute the spices evenly. Now roll the seasoned fries in the beaten egg whites and place them on a baking sheet lined with baking paper, making sure they don’t touch. Bake at 200 degrees Celsius (convection oven) for 30 minutes. Carefully turn over after 15 minutes. Finally, season with salt.
