Crostini with mozzarella

Ingredients for 6 servings:

  • 2 cloves garlic
  • 75 g anchovy fillet(s)
  • 3 tbsp rosemary
  • 140 g butter, soft
  • 12 slices of Ciabatta
  • 2 balls of mozzarella (125 g each)
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Crostini with mozzarella

Peel the garlic and finely chop it along with the anchovies and 1 tablespoon of rosemary needles. Mix it with the butter and spread it on the bread slices. Toast it under the broiler (top rack) for 1-2 minutes. Pat the mozzarella dry and cut into evenly thick slices. Top the bread with the mozzarella and sprinkle with the remaining rosemary needles. Season with salt and pepper. Bake under the broiler for about 3-4 more minutes and serve while piping hot.
