Ingredients for 1 servings:
- 150 g chicken, cooked
- 150 ml chicken broth, ready cooked
- 50 g spinach, New Zealand, alternatively leaf spinach
- 80 g mung bean sprouts, freshly germinated
- 20 small cocktail tomatoes, if possible in different colors
- some smoked salt
- Pepper, freshly ground
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
SIS dinner – quick to make if you have a soup chicken pre-cooked
When I cook a chicken soup, I always make different dishes with it, including this soup. For this soup, I used the smallest pieces of meat. Cut the spinach leaves into small strips/pieces. Thinly slice the tomatoes and set aside. Heat the chicken, broth, and spinach in a saucepan and simmer gently for about 5 minutes. Season with smoked salt and pepper. Now add the mung bean sprouts and tomatoes, but do not let them boil, as otherwise all the vitamins and minerals in these ingredients will disappear.
