Ingredients for 8 servings:
- 10 g soy flour
- 140 g flour, 550
- 40 g sugar
- 5 g baking powder
- 1 tbsp extra virgin olive oil
- 1 pinch of salt
- 75 ml water
- 1 cup of soy yogurt (yogurt alternative), natural (100 g)
- 1 tsp sugar
- 2 pinches of ground vanilla, alternatively 1 tsp vanilla sugar
- 1 tsp cornstarch
- 1 large apple
- 1 tsp sugar
- 3 tsp. cinnamon powder, if you like you can use more
- Margarine, in flakes (added to the molds before baking)
- Margarine and breadcrumbs for the molds
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
vegan…with yogurt
Make a batter from the ingredients, from soy flour to water. This works quite well with a wooden spoon. Don’t worry, you won’t taste the olive oil. Pour the batter into the molds, greased with margarine and sprinkled with breadcrumbs, and press the edges up slightly. Empty the yogurt into a small bowl and mix with the sugar, vanilla, and cornstarch. Roughly grate the apple, peeled (without the core), and immediately fold it into the yogurt to prevent it from browning. Pour this mixture onto the batter in the molds. Bake at 180°C for approximately 30-35 minutes. Please do the toothpick test. (I baked again in the Omnia oven, so I can’t give the exact baking time.)
